I have made this for 3 years in a row now for the holidays. Every one loves it and talks about for weeks after eating it! I even have had requests for it during the rest of the year. I love making this recipe, and it's more fun when my young one helps me make it!

I had some extra packages of gingerbread cookie mix that will go bad by next Christmas. I saw this recipe on the back of the package, and decided to make it. This will be one of my favorites now! Very tasty! The gingerbread crust is dense, but the cheesecake topping is very light!

I made this last year for our family Christmas gathering. Everyone ranted and raved over how delish this recipe was! I decide to make into a real cheesecake versus the bars, and it turned out divine. I recommend this for anyone looking for something with traditional taste with an unexpected twist.

I made the cheesecake recipe. I accidently forgot to bake the crust! Actually turned out amazing. Although it was tough to get out of the pan with a moist crust. I also drizzled caramel over the top. There was a lot of moaning going on and no talking. Everyone raved about it! Tried it again with a baked crust ~ I like it better uncooked.
