Ingredients

cup packed brown sugar
3/4
cup butter or margarine, softened

teaspoon vanilla

egg

cups Gold Medal® all-purpose flour
1/2
teaspoon baking soda
1/2
teaspoon ground ginger
1/2
cup finely chopped crystallized ginger
2
tablespoons granulated sugar

Directions

  • 1 Heat oven to 375°F. In large bowl, beat brown sugar, butter, vanilla and egg with electric mixer on medium speed, or mix with spoon. Stir in flour, baking soda and gingers.
  • 2 Shape dough by rounded teaspoonfuls into 1-inch balls. Place about 2 inches apart on ungreased cookie sheet. Flatten to 1/2-inch thickness with greased bottom of glass dipped in granulated sugar.
  • 3 Bake cookies 8 to 10 minutes or until edges are set. Remove from cookie sheet to wire rack; cool.

I love these cookies, great for everyone. No glaze though. How ever I make mine without the crystallized ginger. They taste amazing.

These are amazing and worth the effort of finding crystallized ginger and chopping it finely! When I ate the first one I was blown away and my guests also the first bite say WOW! Instead of dropping I rolled each into a 1 inch ball and then flattened with the sugared cup as suggested. Also I wouldn't recommend adding a glaze or white chocolate they are sweet enough on their own, unless of course you like extra sweet, so taste one plain first!
