I made these for an office potluck, and everyone flipped. The flavors are not the usual biscotti flavors, and nobody believed I started with a cookie mix. One note though - the dough is soft, so put the logs on two separate sheets. Otherwise, they spread together in the oven, and don't bake all the way through. I also added a little extra ground ginger, too, so that the orange didn't overpower the crystallized ginger. An electric knife is handy for cutting the slices.

I could not find crystallized ginger in the stores so I omitted that as well as the vanilla chips. I added a tablespoon of almond extract and they came out perfectly. This was the easiest biscotti I have ever made.
