Ghostly Shepherd's Pie

Ingredients

lb lean (at least 80%) ground beef

medium onion, coarsely chopped (1/2 cup)

bag (12 oz) Green Giant® Valley Fresh Steamers™ frozen mixed vegetables
1
can (14.5 oz) Muir Glen® organic diced tomatoes with Italian herbs, undrained

jar (12 oz) beef gravy

cups water

cup butter or margarine
1/4
teaspoon garlic powder
2/3
cup milk

cups Betty Crocker® Potato Buds® mashed potatoes (dry)

Directions

  • 1 Heat oven to 375°F. In 12-inch skillet, cook beef and onion over medium heat 8 to 10 minutes, stirring occasionally, until thoroughly cooked; drain. Set 12 peas (from frozen vegetables) aside for garnish. Add remaining frozen vegetables, tomatoes and gravy to beef mixture. Heat to boiling. Reduce heat to medium-low. Cover and cook 8 to 10 minutes, stirring occasionally, until vegetables are crisp-tender.
  • 2 Meanwhile, in 2-quart saucepan, heat water, butter and garlic powder to boiling. Remove from heat; add milk. Stir in dry potatoes; blend well.
  • 3 Spoon beef mixture into ungreased 8-inch square (2-quart) or oval (2 1/2-quart) glass baking dish. With large spoon, make 6 mounds of potato mixture on top of beef mixture to look like ghosts. Place 2 reserved peas on each mound to look like eyes. Bake 20 to 25 minutes or until potatoes are set and mixture is hot.

Ive been making this for my husband & I for almost 5 years (no children hahaha). I cant wait to make this again this year. I do agree with some of the other comments its a lil too much tomatoes, but overall i love this recipe.

Well first of all I didnt make the ghosts on top. I just covered the top with the mashed potatoes. Some of the other reviews were right about the can of tomatoes. It can be kinda runny, maybe just a half can is enough......other than that it was pretty good, just add your own seasoning to taste cause it's kinda bland with out some salt and/or pepper.

I use only a 14.5 oz. can of diced tomatoes. The only veg my kids don't like is onion so I leave those out and add 1 Tbsp of dried minced onion with the garlic powder. I love that we started a Halloween tradition with this recipe. We never know how many people might stop by throughout the night and this is very easy to reheat an individual serving in the microwave. Since the oven is already hot I also make HUGE fresh crab legs. It is a once a year extravagance and those legs are a perfect creepy addition for anyone who does not want to sit down and eat a bowl of Ghost Pie.
