Gazpacho-Style Chicken Salad

Ingredients

  • 4 cups packed torn green and/or red leaf lettuce
  • 1 package (6 oz) refrigerated grilled chicken breast strips
  • 1 medium tomato, chopped (3/4 cup)
  • 1 cup chopped peeled cucumber
  • 3/4 cup chopped yellow bell pepper
  • 1/3 cup thinly sliced red onion

Dressing

  • 1/2 cup spicy Bloody Mary mix
  • 3 tablespoons red wine vinegar
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon red pepper sauce
  • 1 clove garlic, finely chopped

    Place lettuce on serving platter. Arrange chicken in a pile in center of lettuce. Place tomato, cucumber, bell pepper and onion on top of lettuce, around the chicken.

    In tightly covered container, shake all dressing ingredients. Spoon 1/4 cup dressing over salad; gently toss to coat. Serve immediately. Reserve remaining dressing for another use.

  • This recipe is a twist on two summertime favorites. It has the fresh garden flavors found in gazpacho served in a cobb-style salad! You can easily serve 4 people by doubling the salad ingredients and using all of the dressing.
  • Change up the flavor of the dressing by experimenting with different types of vinegar. Try white wine vinegar or cider vinegar.
