I loved it, I will definately make it again! I did do the tweeking as suggested, with V-8 and making additional sauce for the next day, I thought it was wonderful, a very nice change of pace, since the garden is really flurrishing with veggies. THANKS!!

I loved this recipe too, but I agree with a lot of the other commenters. It DEFINITELY needed work. DO NOT go solely by the recipe itself. First, I used half the vegetables and twice the lime juice and tomatoe sauce instead of tomatoe juice, and I still thought it was a little bland (and it made A LOT of pasta salad, even with half the veggies). Someone else mentioned that it should be left to sit overnight and I definitely agree. I would almost recommend doubling the sauce amount and thickening it as well. The pasta salad itself though was definitely delicious. It's a little tangy and bitter, but with all the vegetables there is a wide array of individual flavors that also get picked up. It's for people who like to be healthy and have odd tastes though. The party I brought it too had a lot left over (which I was happy about, more for me) and I'd say it's definitely not for the boring, conservative, "chicken and sloppy joes" crowd. Easily the best pasta salad I've ever had though.

i love this recipe! i do agree that as-is, it's a little bland, so i usually make more dressing to put on it. the pasta will absorb a lot of your dressing if you store it overnight, and then in the morning is when i add more dressing. that fixes the blandness perfectly!

We really enjoyed this recipe. It was good right after being made, but much better after sitting overnight. The next time I make it, I might add a little more tomato juice the day after I make it, since the pasta soaked up so much.

I have made this recipe several times. The first time I made this recipe I followed it to the letter and found it to be rather bland, so I jotted down some changes, since I have added a splash of red wine vinegar to the dressing. Maybe next time I''ll use bloody Mary mix or a little hot sauce or spicy V-8 cocktail juice. I usually try recipes the first time as is, then tweek them after that.

I made this last weekend for a family reunion and was extremely disappointed! Apparently I wasn''t the only one because I took a lot of it home with me. I even doubled the sauce like another user indicated and it still was very mediocre. It would have been better with just plain old italian dressing on it instead of the vinaigrette that is called for in the recipe. I won''t make this again.

This is a backyard picnic hit. A colorful dish with a light, crisp flavor. The fresh taste of cilantro and lime are perfect for summer.

This salad has a colorful presentation. The flavors blend very well and tastes even better making it the night before.
