Beef roast, horseradish and Melba rounds - mix together in a terrific appetizer recipe- in just 15 minutes.

Ingredients

  • 1/4 cup light sour cream
  • 1/2 teaspoon prepared horseradish
  • 1/4 teaspoon Dijon mustard, if desired
  • 24 garlic Melba rounds or other low-fat garlic crackers
  • 4 slices (about 1/4 lb.) cooked roast beef (from deli), each cut into 6 strips
  • 1 tablespoon chopped fresh parsley

Steps

    In small bowl, combine sour cream, horseradish and mustard; blend well. Place 1 roast beef strip on each Melba round. Top each with about 1/2 teaspoon sour cream mixture. Sprinkle each with parsley. Arrange on serving platter.

    Horseradish is an herb native to Eastern Europe. Fresh, the spiky leaves are added to salad greens and the root is grated to use as a seasoning. Most familiar is bottled grated horseradish root, white or red, used as a condiment for meat and fish. White horseradish root is marinated in vinegar; the red in beet juice. both are pungently spicy.

    Use your favorite sliced deli meat or poultry for this recipe; try turkey, chicken or ham. Sprinkle the crisps with chopped chives or very thinly sliced green onions in place of the parsley.
