Garlic Beef Bruschetta

A few easy ingredients on toasted French bread spells yum for a quick-fix potluck or picnic appetizer.

Ingredients

loaf French bread, cut into thirty 1/4- to 1/2-inch slices

tablespoons olive or vegetable oil
1/2
cup soft cream cheese with roasted garlic

ounces thinly sliced cooked deli roast beef
1/4
teaspoon coarsely ground pepper
4
roma (plum) tomatoes, thinly sliced
8
medium green onions, sliced (1/2 cup)

Directions

  • 1 Heat oven to 375ºF. Brush both sides of bread slices with oil. Place on ungreased cookie sheet. Bake about 5 minutes or until crisp. Cool 5 minutes.
  • 2 Spread cream cheese over each slice. Top with beef; sprinkle with pepper. Top each with tomato slice and onions.

The bread can be toasted up to a day ahead of time. Store loosely covered at room temperature.

Use sliced smoked turkey breast instead of the roast beef.

Any savory-flavored cream cheese, such as cream cheese with chives and onions, can be used in place of the roasted garlic cream cheese.

Sprinkle drained capers over the cream cheese.

I made this for a party at home and it was loved by all. My husband does not care for the traditional Bruscetta, he doesnt like capers or the cheese. I picked this recipe for him and he really enjoyed it. It was very simple to make and even the kids loved it. I will deffinetly make this recipe again.
