My whole family really liked this dish and I served it with Whole grain wheat spaghetti. I omitted the peas and substituted yellow squash instead. I carmelized the onions and garlic with basil just as I would have a homemade marinara sauce. I used fresh tomatoes and scraped all the juice from them in with the dish.

This is a great recipe for the summer - light and filling. It also is wonderful with fresh vegetables from your garden. I replaced the peas with a diced red bell pepper. The pepper gives it a great flavor. Everyone (including my meat lover husband) loves this recipe.

I loved it. I substituted cooked spaghetti squash for the spaghetti and saved some calories. Leftover vegetables are great topping for an egg omelet, or chilled and serves as a salad with your favorite salad dressing.

Colorful, healthy, tasty ... we all loved this dish, even the children. Next time I will add, again, the multi colored bell peppers. It is just so colorful and festive looking with the bell peppers in there. My family is not real big on the squash, so I used 1 small greenzucchini and 1 small yellow summer squash, both sliced thin. With the bell peppers in there, they did not even notice! It tasted so good, that they were too busy eating it to pick out the different parts.

Terrific recipe but a little too much zucchini. I replaced 2 cups of zucchini with 2 cups of red, yellow and or green peppers cut into chunks.I also added some fresh spinach from my garden at the very end before putting on spaghetti. MMMMmmmmmm Good!
