Best beef-veg sup I ever had. Used canned zucchini in Italian sauce and added a bit of Italian sausage.

I made this soup today. It was really good and my hubby enjoyed it. It was quick and easy to put together. I will definitely be making this soup again! I will probably be making it for my needle group's monthly food nite. I can't wait for them to try it also!

This soup is delicious on a chilly Autumn evening. I did make a a few changes though. I used zuccini and yellow squash, omitted the fresh basil and added 2 sweet Italian sausages (casing removed, pinched off pieces and dropped right into the soup. The flavors of the sausage simmered into the soup as it cooked). We topped it off with a sprinkle of parmesean cheese. Served it with a crusty roasted garlic bread. MM MM MM
