Ingredients

Yogurt Curry Dressing

1/2
cup plain yogurt
2
tablespoons olive or vegetable oil
1/2
teaspoon salt
1/4
teaspoon curry powder

Salad

2
cups cooked couscous
1
cup sliced zucchini
1
cup Green Giant® garbanzo beans (from 15-oz can), rinsed and drained
1/4
cup chopped red bell pepper
2
medium green onions, sliced (2 tablespoons)
Lettuce leaves

  • 1 In small bowl, mix all dressing ingredients.
  • 2 In large bowl, mix all salad ingredients except lettuce. Stir in dressing. Cover and refrigerate at least 1 hour to blend flavors but no longer than 6 hours.
  • 3 Serve salad on lettuce.

The original salad is a bit bland, but can be made tastier with a few additions or changes. Add chopped marinated artichoke hearts, substituting the oil in the recipe for the marinade. Toss in sliced olives (I like the stuffed ones, halved). Cook couscous in chicken, veggie, or beef broth. For a main dish salad add shrimp or cooked chicken, or thinly sliced beef. Possibilities are endless. Have fun with it.
