Garden Couscous Salad

Ingredients

Yogurt Curry Dressing

cup plain yogurt

tablespoons olive or vegetable oil

teaspoon salt

teaspoon curry powder

Salad

cups cooked couscous

cup sliced zucchini
1
cup Green Giant™ garbanzo beans (from 15-oz can), rinsed and drained

cup chopped red bell pepper

medium green onions, sliced (2 tablespoons)
Lettuce leaves

  • 1 In small bowl, mix all dressing ingredients.
  • 2 In large bowl, mix all salad ingredients except lettuce. Stir in dressing. Cover and refrigerate at least 1 hour to blend flavors but no longer than 6 hours.
  • 3 Serve salad on lettuce.

Expert Tips

Cooked white or brown rice can be used instead of couscous.
