Garden Bean and Onion Salad

Ingredients

Salad

  • 1/2 lb. fresh green beans, trimmed
  • 1/2 lb. fresh yellow wax beans, trimmed
  • 1/2 cup finely chopped red onion

Dressing

  • 1/4 cup olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon sugar
  • 2 teaspoons Dijon mustard
  • 1/2 teaspoon salt
  • 1/2 teaspoon coarsely ground black pepper

    If desired, cut beans in half crosswise. Place beans in 2-quart microwave-safe bowl. Add 1/2 cup water; cover with microwave-safe waxed paper. Microwave on High for 10 to 12 minutes or until crisp-tender. Drain. Rinse with cold water to cool; drain well.

    Meanwhile, in medium bowl, combine all dressing ingredients; mix well.

    Add beans and onion to dressing; toss to coat. Cover; refrigerate at least 1 hour before serving to blend flavors.

  • Yellow wax beans are a variety of green bean with milder flavor. Pale yellow in color, they are long and slender with an edible pod. When buying green or wax beans, look for those that are smooth, brightly colored, crisp and blemish-free.
  • Wax and green beans can be stored in the refrigerator for up to 5 days in a tightly sealed plastic bag.
