Fruited Rice Salad with Toasted Almonds

cups cold cooked white rice

cup seedless red grapes

medium oranges, peeled and chopped

small kiwifruit, peeled and sliced
Lettuce leaves

cup slivered almonds, toasted

  • 1 Mix marmalade, soy sauce and ginger in large bowl.
  • 2 Add remaining ingredients except lettuce and almonds; toss. Serve on lettuce; sprinkle with almonds.

Expert Tips

One-third cup honey Dijon or poppy seed dressing may be substituted for the orange marmalade, soy sauce and ginger. Don't have time to peel fresh oranges? Use 1 can (11 ounces) mandarin orange segments, drained, instead.

Decrease rice to 1 1/2 cups. Add 1 1/2 cups cubed cooked chicken or turkey with remaining ingredients in step 2. Continued as directed.
