Ingredients

  • 3 tablespoons orange marmalade
  • 1 tablespoon soy sauce
  • 1/4 teaspoon ground ginger
  • 3 cups cold cooked white rice
  • 1 cup seedless red grapes
  • 2 medium oranges, peeled and chopped
  • 2 small kiwifruit, peeled and sliced
  • Lettuce leaves
  • 1/3 cup slivered almonds, toasted

Steps

    Mix marmalade, soy sauce and ginger in large bowl.
  • 2
    Add remaining ingredients except lettuce and almonds; toss. Serve on lettuce; sprinkle with almonds.

  • tip 1
    One-third cup honey Dijon or poppy seed dressing may be substituted for the orange marmalade, soy sauce and ginger. Don't have time to peel fresh oranges? Use 1 can (11 ounces) mandarin orange segments, drained, instead.
  • tip 2
    Decrease rice to 1 1/2 cups. Add 1 1/2 cups cubed cooked chicken or turkey with remaining ingredients in step 2. Continued as directed.
