“When confronted with the foods I love but don’t eat anymore, I say, ‘I can’t eat that.’ There is no room for ‘just a little,’ because it’s hard to stop. It is so great to get good-tasting desserts that are reasonable in fat and calories, like this bread pudding.” Nanci D.
A Note from the Nutritionist:
Because dried fruits have had most of their water removed, they are concentrated sources of nutrients. Raisins, for instance, are especially rich in iron and fiber. Add raisins to cereal, yogurt and low-fat granola for an on-the-run, high-energy snack, or stir them into low-fat muffins, breads and desserts.
