Fruit Cobblers for Two

Make just enough hot fruit dessert to share without having leftovers. The buttery crust bakes perfectly aloft the diminutive cups of fruit.

Ingredients

cup fruit pie filling, (apple, peach, cherry or blueberry)
1/2
cup Original Bisquick® mix
2
tablespoons milk
1
tablespoon sugar
1
teaspoon butter or margarine, softened

Directions

  • 1 Heat oven to 400ºF. Divide pie filling between 2 ungreased 10-ounce custard cups.
  • 2 Stir remaining ingredients until soft dough forms. Spoon half of dough onto pie filling in each custard cup. Sprinkle with additional sugar if desired.
  • 3 Bake 15 to 18 minutes or until topping is light brown.

Perfect amount for two people or JUST my boyfriend. (He's a big guy) Sometimes I double the batter recipe and throw some cinnamon in the batter and sprinkle some brown sugar and cinnamon on top. Comes out PERFECT!

I used fresh peaches that had been sliced with a little sugar mixed in, sooooooooo delicious. Very good recipe and very quick to fix, during the winter months I will try it with the canned fillings but the fresh fruit is wondeful!

Thank you for a SMALL recipe! I find things better fresh rather than leftover, and this is a perfect example. I had picked Mulberries and was looking for a way to use them. Since I like them and my husband isn't that crazy about them, this recipe was easily halved so I could get my cobbler on...although I kinda wished I'd made two! :)
