Ingredients

Cupcakes

1 1/2: cups Original Bisquick® mix

3/4: cup granulated sugar

1/3: cup unsweetened baking cocoa

1/4: cup chocolate-flavor malted milk powder

2/3: cup milk

1/4: cup vegetable oil

1: teaspoon vanilla

2: eggs

Frosting

2: tablespoons chocolate-flavor malted milk powder

2: tablespoons milk

2: cups powdered sugar

1: tablespoon unsweetened baking cocoa

1/4: cup butter or margarine, softened

Directions

1 Heat oven to 400°F. Line 16 regular-size muffin cups with paper baking cups. In large bowl, beat all cupcake ingredients with electric mixer on low speed 30 seconds, scraping bowl constantly. Beat on medium speed 4 minutes, scraping bowl occasionally. Spoon evenly into muffin cups.
2 Bake 15 to 20 minutes or until toothpick inserted in center comes out clean. Immediately remove from pan. Cool completely, about 30 minutes.
3 In medium bowl, stir together malted milk powder and milk; let stand 5 minutes. Add remaining frosting ingredients; beat with electric mixer on medium speed 1 to 2 minutes or until smooth. Spread frosting over cupcakes.

This recipe was a lifesaver. My grandson's second birthday is tomorrow and I had no mixes etc. I had Bisquick.... The only thing I changed is to substitute another powdered chocolate drink powder for the malted milk. I used the normal sized cupcake paper cups and filled 11 of them about 1/4 inch from the rim. I baked them for 18 minutes at the recommended 400 degree oven, and OMG. They rose to perfection and smelled absolutely awesome. I will keep this recipe in my special place. You will be extremely happy, and they are so easy to make. I think the important thing is to positively beat them for 4 minutes so that the batter is thick and infused with air.

I have baked every week for years. These cupcakes are too dry. My oven was smoking at 400. I'm giving it one spoon because the frosting is good. Maybe a lower temp would work. I won't find out because I'm not going to try these again. Do try the frosting with another cake mix.
