Since my 4 grown sons were toddlers, I have made whoopie pies from scratch, much to everyone's enjoyment. Wanting a quick chocolate fix a few weeks ago, I made these cookies, did not frost them, but layered two together with a your Whipped Vanilla Frosting - Voila! Faux whoopie pies! They were so quick and easy and so delicious, I've added them to my recipe box. Hope others try and enjoy.

This is without a doubt the best chocolate cookie I have ever tasted! It was one of the recipes I served at a party. Note: I had to add an extra Tablespoon of hot water to make the icing spreadable.
