medium peeled or unpeeled potatoes, thinly sliced (4 cups)

medium onion, thinly sliced, if desired

  1. In 10-inch nonstick skillet, heat oil over medium heat. Add potatoes and onion to skillet; sprinkle with salt and pepper.
  2. Cover and cook over medium heat 10 minutes, stirring occasionally. Uncover and cook 10 minutes longer, stirring occasionally, until potatoes are brown and tender.
