tablespoons vegetable oil
medium peeled or unpeeled potatoes, thinly sliced (4 cups)
medium onion, thinly sliced, if desired
In 10-inch nonstick skillet, heat oil over medium heat. Add potatoes and onion to skillet; sprinkle with salt and pepper.
Cover and cook over medium heat 10 minutes, stirring occasionally. Uncover and cook 10 minutes longer, stirring occasionally, until potatoes are brown and tender.
Slice the potatoes up to a day ahead of time, and cover them completely with cold water so they don't turn brown or black. Drain and pat dry with paper towels before cooking, so water won't make the hot fat spatter.
