Double-coating the tomatoes ensures a crispy, crunchy exterior and helps keep the tomatoes from bursting before the coating becomes crunchy.
A quick bath in the hot oil is enough to crisp the outsides and just soften the insides of the tomatoes. Be sure to cook the tomatoes until just golden brown, being watchful so they don’t explode.
Greek yogurt makes for a thick and creamy sauce. The small amount of mayonnaise in the dipping sauce adds a lusciousness without being overly rich. I like olive oil mayonnaise, but use whatever you like best.
