Fresh Peas and Prosciutto

lb prosciutto or deli-style ham slices, chopped (1/3 cup)

small onion, chopped (1/4 cup)

lb fresh green peas, shelled*

cup chicken broth

tablespoon sugar

tablespoon chopped fresh parsley

teaspoon salt

  • 1 In 10-inch skillet, heat oil over medium-high heat. Cook prosciutto and onion in oil, stirring frequently, until onion is tender.
  • 2 Reduce heat to medium. Stir in remaining ingredients. Cover and cook about 10 minutes or until peas are tender.

Expert Tips

2 1/2 cups frozen green peas (from 1-lb bag) can be substituted for the fresh peas. After stirring in remaining ingredients in step 2, cover and cook 3 to 5 minutes or until peas are hot.
