Ingredients

  • 2 cups chopped fresh or frozen (thawed) peaches
  • 1/4 cup finely chopped red bell pepper
  • 2 to 4 tablespoons grapefruit juice
  • 4 teaspoons chopped fresh cilantro
  • 2 medium green onions, chopped (2 tablespoons)
  • Dash of salt

Steps

    Mix all ingredients in glass or plastic bowl.

    Cover and refrigerate at least 1 hour to blend flavors.

    For the best peach salsa, select peaches that are firm or only slightly soft when pressed. The skin should be creamy or yellow. Avoid bruised, very hard or green peaches when picking fruit for your homemade peach salsa.
