Fresh Fruit Salad with Creamy Dressing

Ingredients

Creamy Dressing

  • 1/2 cup whipping cream
  • 1 tablespoon powdered sugar
  • 1/2 teaspoon grated lemon peel

Fruit

  • 2 apricots or nectarines, pitted, sliced
  • 1 orange, peeled, sliced
  • 1 medium pineapple, peeled, cored and cut into 1-inch pieces
  • 1 bunch small seedless grapes, cut in half (2 cups)

    In chilled small bowl, beat all dressing ingredients with electric mixer on high speed until soft peaks form.
  • 2
    In large bowl, place fruit. Add dressing; toss gently to coat. Store in refrigerator.

  • Make this great-tasting, quick recipe even easier by using 1/2 cup bottled poppy seed dressing.
  • Grated orange peel makes a great stand-in for the lemon peel.
  • If coring and cutting up a pineapple isn’t your idea of fun, go ahead and use 3 cups purchased cubed fresh pineapple instead.
