Fresh Apple Streusel Pecan Cake

Ingredients

Streusel Topping

cup quick-cooking or old-fashioned oats

cup packed brown sugar

cup pecans, coarsely chopped

tablespoons canola or vegetable oil

Cake

cup granulated sugar
1
container (6 oz) Yoplait® Greek Fat Free honey vanilla yogurt
2/3
cup canola oil
1
teaspoon vanilla
2
eggs
1 1/2
cups Gold Medal® all-purpose flour
1 1/2
cups Gold Medal® whole wheat flour
3
teaspoons baking powder
1/2
teaspoon ground cinnamon
1/2
teaspoon salt
2
cups finely chopped, peeled apples (2 medium)

Directions

  • 1 Heat oven to 350°F. Spray 13x9-inch pan with cooking spray. In small bowl, mix streusel ingredients with fork until crumbly; set aside.
  • 2 In large bowl, beat sugar, yogurt, oil, vanilla and eggs with electric mixer on low speed about 30 seconds or until blended. Add all remaining ingredients except apples; beat on low speed about 1 minute or until blended. Stir in apples. Spread batter in pan. Sprinkle evenly with topping.
  • 3 Bake 40 to 45 minutes or until toothpick inserted in center comes out clean. Serve with ice cream or whipped cream, if desired.

I loved it! The family wasn't sold on it. The cake was very dry. I did bake it only 35 minutes. Next time I would add more yogurt or oil to make it more moist. The spices added to the flavor. The topping is out of this world!

I agree that this recipe provides healthy options, but I thought the batter lacked flavor. And while I baked it less than the recommended minimum time, it was still dry. I could try again, but it isn't worth it to me.

Just made this for the first time and my husband and I found it to be delicious. I didn't have greek yogurt on hand, so I used low fat vanilla yogurt and the cake turned out perfect. Due to dietary restrictions I omitted the pecans. With the two changes I made the cake was scrumptous. Can't wait to try it out on the grandchildren.
