French Toast with Gingered Applesauce

Ingredients

to 1 teaspoon grated gingerroot or 1/8 teaspoon ground ginger
1/2
cup natural applesauce
1/4
cup sugar-free maple-flavored syrup

eggs plus 1 egg white or 3/4 cup fat-free cholesterol egg product
3/4
cup fat-free (skim) milk
1
teaspoon vanilla
1/4
teaspoon salt

  • 1 Stir together gingerroot, applesauce and syrup in small microwavable bowl. Microwave uncovered on Medium (50%) about 1 minute or until very warm; set aside.
  • 2 Beat eggs and egg white, milk, vanilla and salt in small bowl with fork or wire whisk until well mixed; pour into shallow bowl.
  • 3 Spray griddle or 10-inch skillet with cooking spray; heat griddle to 375° or heat skillet over medium heat. Dip bread into egg mixture, coating both sides. Cook about 2 minutes on each side or until golden brown. Serve with applesauce mixture.

To boost the fiber in this spiced French toast, try using whole wheat bread.

For a great start to the day, sizzle a couple of reduced-fat breakfast sausage links while the French toast is cooking, and serve with herbal tea or coffee.

For quick work in the morning, make the applesauce mixture and egg mixture the night before and store covered in the refrigerator.
