Freeze-Ahead Spinach-Cheese Lasagna Rolls

Blogger Jessica Walker from Lil Miss Bossy shares a convenient lasagna roll recipe that you make ahead of time and freeze until ready to bake.

  • Prep Time 45 min
  • Total Time 1 hr 55 min
  • Servings 45

3
boxes (16 oz each) lasagna noodles
6
cups crumbled feta cheese (24 oz)
1
container (24 oz) cottage cheese
1
container (15 oz) ricotta cheese
1
cup shredded Parmesan cheese (4 oz)
2
boxes (9 oz each) Green Giant™ frozen chopped spinach, thawed, squeezed to drain
Marinara sauce
Shredded mozzarella cheese

  • 1 In Dutch oven, cook noodles in boiling water, working in batches of about 15 noodles, about 5 minutes or just until flexible but not fully cooked. Return water to boiling before adding next batch of noodles. Drain; place noodles in single layer on paper towels.
  • 2 In large bowl, mix feta cheese, cottage cheese, ricotta cheese and Parmesan cheese. Stir in spinach. Spread 3 tablespoons filling down length of each noodle; roll up and place seam side down on cookie sheet. Freeze about 30 minutes.
  • 3 Place frozen rolls in resealable freezer plastic bags. Seal bags; freeze up to 3 months.
  • 4 To bake, remove 6 lasagna rolls from bag. Spray 8-inch square (2-quart) glass baking dish with cooking spray; place rolls in dish. Cover with foil; thaw in refrigerator overnight.
  • 5 Heat oven to 350°F. Pour 2 cups marinara sauce over rolls; sprinkle with 1 cup shredded mozzarella cheese. Cover; bake 35 to 40 minutes or until sauce is bubbly and cheese is melted.

Expert Tips

Since the lasagna rolls are frozen individually, you can easily remove the desired amount from the freezer bags at a time. If you’re serving a bigger group, thaw as many rolls as needed and use more than one 8-inch baking dish or a larger dish. Increase the amounts of marinara sauce and mozzarella cheese accordingly.

You can substitute your favorite tomato pasta sauce for the marinara sauce, and replace the mozzarella cheese with another shredded cheese such as Monterey Jack. Feel free to use more or less sauce and cheese to suit your personal preference.

To complete the meal, serve the lasagna rolls with garlic bread and a tossed green salad.
