I agree with everyone as far as the cheese being too thick and clunky and having to thin it out. I didn't have any whipping cream but I used a little milk and butter to thin it out a little. I prepared this dish topped with shrimp scampi. The scampi sauce helped with the thinning of the cheese too and kept it from getting dry and the shrimp was a fantastic finishing touch. My family loved this and I plan to be cooking it again.

Oh my goodness! I added garlic and shrimp to this recipe for Valentine's Day. Also had to add some Heavy Whipping Cream to the cheese mixture because it was too thick to be able to 'coat the noodles'. But after the slight modifications, this looked and tasted almost identical to Olive Garden's Seafood Alfredo. We LOVED it!!!

My family and I can't stand ricotta cheese. Is there another kind of cheese that you would recommend I used as a substitute? Or can I just use more of the remaining cheeses? The rest of this recipe looks delicious! Can't wait to try it!

The flavor of this dish was excellent but I was a bit disappointed in the consistency. After it was put on your plate it kind of "dried" out, lacking the creaminess of a regular alfredo sauce. I substituted gorgonzola for feta, as I made the gorgonzola mushroom stuffed beef tenderloin (recipe from this website!) for the entree. I added some heavy cream to make it a bit creamier. Really tasty tho!

This was really great. It almost cooks faster than the fettucini with minimal prep. Just be sure your fettucini is stirred enough to not stick together at the ends! The grated Asiago and Parmessan Regiano make it very "creamy" and smooth. The use of Italian parley is essential. I served it with a green salad, Ciabata garlic bread and 2002 Buena Vista Cabernet Sangiovese. It was excellent.
