Made this for dinner last night with a few substitutions. I used mozzarella and feta cheese, skipped the onion and added lots of garlic. I used tilapia as the fish and the topping kept it very moist! I found this recipe very easy and tasty, but you need to spice it up with garlic, salt, and pepper in my opinion. Some fresh herbs could also enhance the flavor. This recipe makes a lot of the Florentine topping. I only used 4 pieces of fish, but it would have been enough for 6 at least. I would make this again and change it up a little.

Unless it's spinach dip, my husband never eats the stuff and yet, he couldn't stop eating this. The whole dish was flavorful without overpowering the orange roughy, which was moist yet still flaky.
