Fish Fillets with Roasted Red Pepper Mayonnaise

Ingredients

  • 1 tablespoon butter
  • 1 1/2 to 2 lb. tilapia fillets
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon paprika
  • 1/2 cup light mayonnaise
  • 1/4 cup chopped roasted red bell peppers (from a jar)
  • 1/4 teaspoon cumin
  • 1 garlic clove, minced

    Heat oven to 400°F. Using about 1/4 of the butter, lightly grease shallow baking pan. Arrange tilapia fillets in buttered pan. Brush fish with remaining butter; sprinkle with salt, pepper and paprika.

    Bake at 400°F. for 15 to 20 minutes or until fish flakes easily with fork.

    Meanwhile, in small bowl, combine all remaining ingredients; blend well. Serve fish with mayonnaise mixture.

  • When cooked, the lean white flesh of the tilapia is sweet, mild, tender and has no "fishy" flavor. The tilapia at your market may be from a fish farm in this country or from the fresh waters of Colombia or Coasta Rica.
  • In the past, if you wanted to add the sweet-smoky flavor of roasted red bell peppers to your cooking, you had to roast, then peel the ripe peppers. Now roasted bell peppers are available by the jar. The roasted peppers make a tasty addition to spreads, soups, pastas and salads.
