Make sure to use gel food coloring to get the vivid coloring. Regular drops will yield pink and light blue, if you use too many drops to deepen color, the batter will taste bitter. This recipe makes 36 of each color if you are making mini-cupcakes and fill 2/3 full, thus you will have 36 containers with two cupcakes each. Don't overfill mini-cupcake pan or the cupcakes will be too big to fit in container. You can also make these in the plastic containers like petit-fours. Divide cake batter into two round cake pan (one for red and one for blue). After cooling, slice each round in half. Stack alternating layers with white frosting in between and then press the push-ups down onto the layered cake, making your way around. Finish push-up with swirl of white frosting on top. Still has look of fire craccker with less frosting, faster time.

Doesn't anyone else see something WRONG with this recipe? It says it makes 36, calls for 36 push-pop containers, but says it makes 18 blue and 18 red cupcakes. If each pop takes two cakes, then it only makes 18, right? So what about the rest of the numbers? How do we know they're right? Does the recipe call for too much or too little frosting? I would have thought this kind of thing would be worked out before publishing.

I baked one recipe chocolate cupcakes and one recipe yellow cupcakes and frosted the 48 with red, white and blue frosting. using the vanilla cake mix, made 4o each blue and red minicupcakes. Could not find the plastic pushup containers, but bought two ounce plastic cups. Filled the cups red cupcake on bottom, icing, blue cupcake, and icing. made 40 of those. Served with plastic spoons for the children. All of this was a real hit at our church social hour after services on July 3rd. thanks for the ideas, Betty Crocker!

I didn't have access to the push-up containers so as I await their arrival from mail ordering I decided to make these using clear acrylic shot glasses. I found these at the party store. They really turned out quite cute! I added red powdered edible glitter to the top and they are really sparkly! These will be the hit of our BBQ!
