Fireside Popovers with Brie

cup Gold Medal® all-purpose flour

cup milk
1
teaspoon sugar
1/2
teaspoon salt
1/2
pound Brie cheese, cut into 24 chunks

  • 1 Heat oven to 450ºF. Generously grease 24 small muffin cups, 1 3/4x1 inch. In medium bowl, beat eggs slightly with fork or wire whisk. Beat in flour, milk, sugar and salt just until smooth (do not overbeat). Fill cups about two-thirds full. Bake 5 minutes.
  • 2 Reduce oven temperature to 350ºF. Bake about 10 minutes longer or until crusty and golden brown. Cut a small slit in top of each popover. Insert cheese chunk in each popover. Bake 5 minutes. Immediately remove from pans. Serve hot.

Expert Tips

Add extra flavor to the popovers by stirring in 1/2 teaspoon dried basil or rosemary leaves or 1/4 teaspoon grated lemon peel with the flour, milk, sugar and salt.

Bake popovers and cut the slit in top of each. Cool, wrap tightly and freeze. When ready to serve, insert cheese chunk in each frozen popover. Place in muffin cups. Heat in 350°F oven 8 to 10 minutes or until cheese is melted.

Quite bland to begin with. Topped with "Mother's Pure Preserves" Raspberry Jam and cinnamon. Absolutely delightful :)

We served cranberry and brie stuffed chicken at our wedding that was AMAZING! I am going to make this recipe, but add a cranberry to each!

I tested these out last night trying to determine what I'd serve on Sunday night during the Oscars. Since I think of Brie as more elegant than most cheeses, it seemed like a perfect appetizer for a red carpet party. And while they were definitely lovely, they could use a little kick. For a savory popover, I'd maybe add a bit more salt and some rosemary to the batter. For a sweet snack, I think the honey glaze suggestion below sounds incredible. And Brie and honey are such a perfect pair. Otherwise, the recipe could not be easier, and if you're like me and only have a 12-cup muffin tin (instead of 24), the popovers were just as good and only slightly larger than bite-size. They just need to bake a minute or so longer.
