My first time making Gazpacho, so I used this recipe. It was delicious and easy to make. I did add summer squash (cause I love the stuff). I also made it a second time using Rotel for the "spicy" part--whew! It was spicy, but very tasty. FYI--it freezes well, and if you briefly nuke it (3-5 on low to medium), it's the perfect tempurature.

Yes, Susie, It was a Spanish dish when I lived in Spain too! I ate this 'soup' constanly while I was pregnant....Very Healthy, and very low in calories! Didn't put the wine in it then, but sure do now!
