Ingredients

Cake

box Betty Crocker® SuperMoist® devil's food or yellow cake mix
Water, vegetable oil and eggs called for on cake mix box
Platter, tray or cardboard (14x10 inches), covered with wrapping paper and plastic food wrap or foil

Frosting and Decorations

2
containers (1 lb each) Betty Crocker® Rich & Creamy vanilla frosting
Black food color
Betty Crocker® red gel food color
10
red chewy fruit-flavored gumdrops (not sugar coated)
6
yellow chewy fruit-flavored gumdrops (not sugar coated)
4
creme-filled chocolate sandwich cookies
2
pieces black licorice coil

Directions

  • 1 Heat oven to 350°F (325°F for dark or nonstick pans). Grease or spray bottoms and sides of three 8x4-inch loaf pans.
  • 2 Make cake batter as directed on box. Divide batter evenly among pans. Bake 27 to 34 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes. Remove cakes from pans; place rounded sides up on cooling racks. Cool completely, about 1 hour.
  • 3 Spoon 1/2 cup of the frosting into small bowl; stir in enough black food color to make gray. Place 1/2 cup of the remaining white vanilla frosting in small resealable plastic freezer bag; cut small tip off 1 corner of bag. Spoon remaining white vanilla frosting into large bowl; stir in enough red food color until desired red color.
  • 4 Trim rounded tops from each cake to make flat surface. Cut cakes and arrange pieces on platter as shown in diagram, attaching pieces with thin layer of red frosting, to form fire engine. Spread thin layer of red frosting over entire cake to seal in crumbs. For easier handling, refrigerate or freeze cake 30 to 60 minutes.
  • 5 Frost area between cab and back of engine with gray frosting. Place remaining gray frosting in small resealable plastic freezer bag; cut small tip off 1 corner of bag. Frost remaining fire engine with red frosting. Pipe on windshield, windows and ladder with white frosting. Trim and discard thin slice (about 1/8 inch) off bottoms of 4 red and 4 yellow gumdrops; attach trimmed gumdrops for headlights and taillights with white frosting. Attach remaining gumdrops on top of engine for lights. For wheels, pipe 1/2-inch circle of gray frosting on center of each cookie for hubcap; attach wheels to cake. Attach licorice coils on sides of cake for hoses.
  • 6 Pipe gray frosting around wheels and bottom edge of engine. For bumpers, pipe 1 or 2 lines of gray frosting on front and back of engine. Store loosely covered.

Did this cake for my daughter's 2nd birthday (she is in love w/fire trucks thanks to her Dad and Grandpa)..anyway...even though I wasn't perfect (the cake kind of fell apart on me) the icing was the PERFECT glue! It was easy, beautiful and tasty. I couldn't get the icing "red" b/c I only had a little gel so it was pink..which worked b/c it was for a girl, but it was fantastic, easy, and enjoyable!! Worth every second!

I made this cake for my son's second birthday, and he loved it! I could not find 8x4 loaf pans, and had to use 9x5.5. So, I had to use an extra box of cake to be sure that I had enough. Filling the pans 2/3 full, I had a little cake batter left over. I also got an extra container of icing just to be safe. I'm a novice cake decorator, so I wanted extra icing because I'm no good at frosting cakes. I'm glad that I had it! I used more red than the recipe called for, and I needed more grey than the recipe called for. Since I only had enough grey to ice the area between the cab and the truck, I used white everywhere else grey was called for. If you ice the area between the cab and the truck first, it is hard to spread the red frosting without smearing the grey everywhere. Ice the truck and then the area between the cab and truck. Instead of using white icing for the windows, I bought Wilton's sugar sheets, light blue, and just cut them out and stuck them on. Easy! I framed them with white icing. Could not find licorice wheels, so I used more oreo cookies. I couldn't find any candies like the ones pictured, so I used Starburst round gummies with liquid inside. It looked nice. I used a lot of red food coloring to get a good, true red: one tall container of Wilton red gel, and two small containers of Wilton Christmas red. I should have purchased the no taste red and used it along with the Christmas red. I used orange icing to write my son's name on the top of the cab, his age on top of the truck in front of the ladder, and his age on the back of the truck. It took me longer than 3 hours and 5 minutes, but it was worth it!
