Make pancakes and freeze in a resealable freezer bag. To reheat, place in single layer on ungreased cookie sheet and cover tightly with foil; heat in 375°F oven about 10 minutes.
Blueberry Pancakes: Stir 1 cup fresh or frozen blueberries into batter.
Apple-Cinnamon Pancakes: Stir 1/2 cup finely chopped peeled apple and 1/2 teaspoon ground cinnamon into batter.
Banana-Walnut Pancakes: Stir 1/2 cup mashed ripe banana and 2 tablespoons chopped walnuts into batter.
Oatmeal-Cinnamon Pancakes: Stir 1/2 cup quick-cooking oats and 1/2 teaspoon ground cinnamon into batter.
