box (1 lb 2.3 oz) Betty Crocker® fudge brownie mix

cups Fiber One® original bran cereal
1/3
cup water
1
egg
1
tablespoon vegetable oil
2
teaspoons vanilla
1/8
teaspoon ground cinnamon
2
tablespoons miniature semisweet chocolate chips

Directions

  • 1 Heat oven to 350°F. Spray cookie sheets with cooking spray. In large bowl, mix ingredients with spoon. Drop dough by rounded tablespoonfuls 2 inches apart on cookie sheets.
  • 2 Bake 10 to 12 minutes until set. Cool 2 minutes; remove from cookie sheets to cooling rack. Cool completely, about 30 minutes. Store in tightly covered container.

I made these by substituting 2 egg whites for the egg, unsweetened applesauce for the oil, and Craisins for the chocolate chips; completely crushing the cereal in my Magic Bullet; and spraying cooking spray on the cookie sheets and they came out perfectly - all I needed were my fingers to get them off the cookie sheets! They taste really good too, however I would agree that 2 T. of chocolate chips (or Craisins) probably isn't enough.

Super delicious! Crushed up the cereal like everyone suggested and even added a cup of creamy peanut butter to give them a little protien boost (didn't use anything but Pam on the pan and they came right off) Yummy!

Wonderful cookies. Turned out perfect!! I did break up my cereal just a little with a meat mallet, as some of the other reviewers recommend. Will most certainly be making these again soon.
