1 box (1 lb 2.3 oz) Betty Crocker® fudge brownie mix
2 cups Fiber One® original bran cereal
1/3 cup water
1 egg
1 tablespoon vegetable oil
2 teaspoons vanilla
1/8 teaspoon ground cinnamon
2 tablespoons miniature semisweet chocolate chips

  1. Heat oven to 350°F. Spray cookie sheets with cooking spray. In large bowl, mix ingredients with spoon. Drop dough by rounded tablespoonfuls 2 inches apart on cookie sheets.
  2. Bake 10 to 12 minutes until set. Cool 2 minutes; remove from cookie sheets to cooling rack. Cool completely, about 30 minutes. Store in tightly covered container.

so so hard to remove from the cookie sheet. Tried both lining it with wax paper and just greasing it with cooking oil. They were good, but not worth the effort cleaning up. Will try baking them in muffin cups instead.

I have lost 30 pounds and this recipe have helped me keep it off! I make them every week and keep them in the freezer or fridge. One time I was out of vanilla and used mint extract instead. So minty good! My kids love these too. I also use the applesause instead of oil. Sometimes I crush a few M&Ms to add to the mix.

I wish I would have read the comments first! I think these would be much better if the cereal was crunched up a little first- otherwise these are perfect for calorie-watchers who need that little bit of a chocolate fix. Delicious. I used egg beaters instead of an egg and next time I plan on trying to use applesauce instead of oil as well. 11 minutes was enough for the perfect balance of chewy and crunchy imo. ^_^ will definitely be making these again.

These are just fabulous. When I need some chocolate, these hit the spot. And low points (for us on Weight Watchers, I calculated at 1 point each when I make 42 cookies) I agree on crushing up the Fiber One cereal a bit. And I use espresso powder in place of the cinnamon (REALLY tasty). They are better fresher (as all cookies are), but since they are so good, stale cookies aren't really an issue!

Tasty way to add the health benefit of more fiber in your diet. I took one Reviewer's suggestion to crush the cereal which worked out well. The only modification I made to the Recipe was adding 1/3 c. ground walnuts. I only ended up with only 28 cookies and baked only for 10 minutes since I prefer a more chewy cookie. The dough was a bit on the sticky side, so it might be helpful to refrigerate it a little while before spooning out. Recommend to any chocolate cookie lover!

I tried this recipe with a lo-fat brownie mix and it was divine. It is hard to get a 5 and 7 year old to eat fiber but they LOVE these! I don't feel so bad eating one or two myself.

I made these for my husband who is watching the sweets. They were actually pretty good. I think next time I will crush the cereal so that they will be easier to chew.

very tasty, but IMPOSSIBLE to get off the cookie sheet! i greased the cookie sheet AND the spatula, and almost all of them fell apart completely...but like i said, delicious!

These healthy cookies are very good. I slimmed them up even more by using applesauce in place of the oil and egg beaters in place of the egg. They are chewy and very moist.
