Ingredients

box (15.3 oz) Betty Crocker® Fiber One™ apple cinnamon or banana nut muffin mix
1/2
cup water
1/4
cup applesauce
1/2
cup fat-free egg product or 2 egg whites

Directions

  • 1 Heat oven to 425°F (or 400°F for dark or nonstick pan). Place paper baking cups in 12 regular-size muffin cups, or grease (or use cooking spray) bottoms of muffin cups. (For best results, use paper cups.)
  • 2 In medium bowl, stir muffin mix, water, applesauce and egg product just until blended (batter may be lumpy). Divide batter among muffin cups (about 2/3 full).
  • 3 Bake 15 to 20 minutes or until golden brown and tops spring back when touched. Cool 5 minutes; carefully remove from pan (if not using paper cups, run knife around edges of cups before removing). Cool completely before storing.

These muffins are outstanding! Because I have to watch my weight, I adjust the added ingredients as well as adding raisins. Instead of whole eggs, I add egg substitute. Instead of oil, I add the same amount of applesauce and I use skim milk. These muffins are moist, bursting with flavor and they are so good for you!

I just tried this muffin mix to serve to frieds who were coming over to visit Friday. They are some of the BEST I have made in a long time! I recommend these to anyone. I tried them because I am doing Weight Watchers, and know that the fiber content in them makes them a better breakfast choice than other muffins might be. I used 2% milk, egg sub., and applesauce, and they were delicious, soft, and a great treat for breakfast. My friends and their 3 & 4-year-olds loved them.
