Ingredients

package (9 ounces) refrigerated fettuccine

tablespoons butter or margarine, melted
3/4
cup ricotta cheese
1/2
cup grated Parmesan cheese
1
large tomato, chopped (1 cup)
2
tablespoons coarsely chopped fresh basil leaves

Directions

  • 1 Cook and drain fettuccine as directed on package. Return to saucepan.
  • 2 Stir together butter, ricotta cheese and 1/3 cup of the Parmesan cheese. Toss with hot fettuccine.
  • 3 Top fettuccine with tomato, basil and remaining Parmesan cheese.

This dish was a hit! It was especially a winner for the cook! It was easy and quick to fix. I loved that there was very little to clean up after making the meal. I am excited for this is to be a repeat.

Unfortunately this is the first Betty Crocker recipe I have tried here that just fell flat with my family. It sounded delicious - how can you go wrong with pasta, cheese, etc? I made the recipe exactly as written but I'm afraid we found the dish to be much too bland - flavorless, really. I agree with some other reviewers who suggested it could use a punch from garlic or other seasoning. It made a beautiful presentation (and I loved the quick and easy aspect) but not enough flavor.
