I thought this was fantastic! I used soy milk instead, so the sauce was a bit thin but the nutmeg flavor was amazing! This is a keeper for sure.

I made this as a mian course, but I think it would have been better as a side dish to chicken, pork, or a ham slice. It was a bit bland for me, so I added some homemade pesto but it still needed a little "oomph." The pros are that it is a fast, healthy meal and good for vegetarian night.

So delicious!!! I added extra veggies and doubled the sauce and had more than enough sauce! It's light and refreshing, definitely a recipe for the hotter months! My husband really liked it, and it had no meat! Would be great with shrimp or chicken too! Super easy to make! Yummmmmmmmm
