Nom, nom, nom! I've made this already 5-6 times. I double the lettuce and feta and use garlic pita chips. My co-workers request this dish when we have a foodie gathering. It's a winner!

I like this Pasta Salad! I did leave out the mint as I don't care for mint in salads. Very convenient with a mix to start but looked/tasted home-made.

I tried this over the weekend and it was delicious! Some of the women with me commented that they would save the croutons last because they don't like soggy bread, but I loved it! If you like bread salads, keep the recipe as-is. Otherwise, you can save them for last. The flavors are wonderful, the "hint of mint" was especially nice.
