Farmer’s Crostini

Ingredients

  • 1 baguette (14 oz), cut into 40 (1/4-inch) slices
  • Nonstick cooking spray
  • 2 packages (3 oz each) cream cheese, softened
  • 1/4 cup crumbled blue cheese (from a 5-oz container)
  • 1/4 cup mayonnaise or salad dressing
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/2 medium cucumber, finely chopped
  • 1 small ripe tomato, finely chopped
  • 1/2 medium red or yellow bell pepper, cut into matchsticks
  • Fresh flat-leaf (Italian) parsley leaves, if desired

    Heat oven to 325°F. Place bread slices on ungreased cookie sheet; spray lightly with non-stick cooking spray. Bake 6 to 9 minutes or until crispy. Remove to wire rack; cool completely.

    In medium bowl, beat cream cheese, blue cheese, mayonnaise, garlic powder, salt and pepper with electric mixer on medium speed until well blended.

    In small bowl, stir together cucumber, tomato and bell pepper.

    Spread about 1 teaspoon cheese mixture on top of each slice of baguette. Top with cucumber and tomato mixture. Garnish with parsley.

  • Substitute vegetables, as desired. Other fresh vegetable options might include tiny broccoli florets, sliced fresh mushrooms, shredded carrot or sliced green onions.
  • Garnish with fresh dill sprigs or fresh thyme sprigs .
  • Grilled vegetables including: grilled zucchini or summer squash, red onion strips, or peppers are great on these crostini. Allow grilled vegetables to cool slightly before placing on cheese mixture.
