Made this for company and hubby said it was a keeper. I used mild red enchilada sauce instead of tomato sauce with the meat and fajita spices, cooked .5 chopped onion with ground chuck, used larger can of sliced olives and added green onions to the olive layer, used more cheese (1.5-2 cups) on each of the layers, and topped with more cheese, olives and green onions. Had no trouble with the oven-bake lasagna noodles.

My family really enjoyed this dish. My teenage son had thirds! I changed the recipe by using diced fresh peppers and onions. I cooked the onions with the hamburger as it browned. The only problem I had was getting the no-boil noodles to soften completely. I think the trick is to ensure the noodles are well covered in sauce. Served with sour cream, homemade guacamole, black olives, salsa and tortilla chips on the side.

This was quick and easy and it was tasted great. I did alter the recipe just a little. Instead of using Lasagna noodles I used tortilla shells. I cooked it for some friends and the pan was cleaned out. Next time I will have to double the recipe. Thanks Betty Crocker. Sincerely, Monica

Instead of frozen vegetables, I sliced up some fresh onion and green pepper which I sauted for just two or three minutes before adding to the lasagna. I also added a thin layer of salsa ontop of the entire lasagna to make it juicier and to add to the kick! This lasagna is also great the next day!

This was easy to prepare - the ingredients will most likely already be in your pantry, which is always nice. I added a can of black beans, a can of kidney beans and a can of corn to the first layer. It added a little bit more to the meal. I also served it on a bed of chopped lettuce with the tomatoes, guac and sour cream on top. Yum Yum. I didn''t find it spicy as the others had.
