Ingredients

containers (8 oz each) fresh ciliegini mozzarella cheese (cherry-size balls) (about 2 cups)

ready-to-eat baby-cut carrots, cut into 1/2-inch slices
1/4
cup light olive oil

tablespoons chopped fresh basil leaves

tablespoon white vinegar
1/4
teaspoon salt

clove garlic, finely chopped

  • 1 Make small cut in center of each cheese ball; insert carrot slice.
  • 2 In medium bowl, mix remaining ingredients. Stir in stuffed cheese balls.
  • 3 Cover and refrigerate 1 to 2 hours to blend flavors. Stir after 30 minutes.

The marinade ingredients can be mixed in a 1-quart resealable food-storage plastic bag instead of a bowl. Add stuffed cheese balls to the marinade mixture.

Make sure to purchase the smallest baby carrots you can find. Mine were too large so the cheese ball fell apart and none of the carrots would stay inside when I had to stir the recipe. The flavor on these are good but they would have turned out better with super mini carrots which aren't always easy to find. I may not make it again just for that reason.
