Ingredients

box Betty Crocker® SuperMoist® white cake mix
Water, vegetable oil and egg whites called for on cake mix box
2
cups powdered sugar
3
to 4 tablespoons milk
Assorted colored rock candy

Directions

  • 1 Heat oven to 350°F (325°F for dark or nonstick pans). Place paper baking cup in each of 58 mini muffin cups.
  • 2 Make cake batter as directed on box. Divide batter evenly among muffin cups, each about two-thirds full. If necessary, refrigerate any remaining batter until ready to use.
  • 3 Bake 11 to 14 minutes or until toothpick inserted in center comes out clean. Cool 5 minutes; remove from pan to cooling rack. Cool completely, about 30 minutes.
  • 4 In small bowl, stir powdered sugar and 3 tablespoons milk until smooth. Add additional milk 1 teaspoon at a time, until desired spreading consistency. Frost cupcakes. Top with rock candy pieces. Store loosely covered.

Using a scoop makes spooning cupcake batter quick, less messy and also ensures cupcakes will be the same size. Use a #70 or small-sized spring-loaded ice cream scoop that is equal to about 1 tablespoon.

If you have only one pan and a recipe calls for more cupcakes than your pan will make, cover and refrigerate the rest of the batter while baking the first batch. Cool the pan about 15 minutes, then bake the rest of the batter, adding 1 to 2 minutes to the bake time.

i just wanted to thank you for your well-written and beuiatful website! I'm putting together an Ecuadorian menu for a Global Meal series I organize for some students at the UW-Madison because we'll be hosting chocolate-makers from the wonderful Kallari Cooperative (www.kallari.com) and wanted a complementary meal. I came up with a menu through some research on traditional Ecuadorian dishes from various sources. But when it came time to find good recipes for many of these dishes, your site just kept popping up again and again, and was so helpful to me. The menu will probably look something like this: Cheese Empanadas with Aji criollo, Locro, Pickled Onions, Ensalada Mixta, Patacones, Fish Ceviche, Mushroom Ceviche, Simple Ecuadorian-Style Rice, Mango-Orange Juice, Kallari Chocolates with many of these recipes from your site! (if you have any suggestions about rounding out the menu or what could make it more traditional or delicious, please do share!) I'll blog about the event after it happens in May, and will share the link with you then, so you can see your cooking influence spread. Thanks again.

I make mini-cupcakes all the time. If you fill a measuring tablespoon with the batter and use a small spoon, such as an ice tea spoon to scrap the batter into the paper cups, makes uniform size cupcakes. Be sure to turn pan halfway thru to ensure even baking.

I would rather make a little larger cupcake. The little rocks on top of the cake might not be a good idea for little children or older folks.
