Eggs & Ham Biscuits

From Betty's Soul Food Collection... Wow the crowd when you present these special occasion brunch sandwiches—with a heaping helping of cheesy ham and eggs between soft buttermilk biscuits!

Ingredients

can (10.2 oz) Pillsbury™ Grands!™ Homestyle refrigerated buttermilk biscuits (5 biscuits)

eggs, beaten
3/4
cup chopped cooked ham (about 4 oz)

tablespoons chopped fresh parsley

tablespoons milk
1
tablespoon butter or margarine
1/2
cup shredded American cheese (2 oz)

  • 1 Heat oven to 350°F. Bake biscuits as directed on can.
  • 2 Meanwhile, in medium bowl, mix eggs, ham, parsley and milk. In 10-inch skillet, melt butter over medium heat. Add egg mixture; cook 6 to 10 minutes or until egg mixture is set, stirring and turning occasionally. Stir in cheese.
  • 3 Split biscuits. Spoon egg mixture evenly onto bottom halves of biscuits. Cover with top halves of biscuits.
