Ingredients

Stewed Apples

cup water
1/2
cup packed brown sugar

teaspoon ground cinnamon

medium Granny Smith apples, peeled and sliced thin

Pancakes

cups Original Bisquick® mix
1 1/2
cups eggnog
1/2
teaspoon ground nutmeg

  • 1 In 3-quart saucepan, heat water, brown sugar and cinnamon over medium-high heat. Stir until sugar is dissolved and mixture begins to boil. Reduce heat, and add apples. Cook uncovered about 20 minutes or until apples are softened.
  • 2 Stir together pancake ingredients until blended. Pour slightly less than 1/4 cupfuls batter onto hot greased griddle. Cook until edges are dry. Turn; cook until golden.

For additional flavor, spike your pancakes. Add 2 tablespoons brandy or bourbon to the batter.

The eggnog taste is not overwhelming. Traditional toppings, like maple syrup or cinnamon and sugar, still go well with these pancakes.
