I made these cakes and brought them to a going away party. They were absolutely delicious and everyone demanded both the recipe and the leftovers. I will definitely make again but will try a couple of tweaks. First, I will use 10 pans, not 9, if making the cakes for gifts or two Bundt pans to serve as dessert. Using 9 pans, the cakes were too rounded on top so the icing ran off without absorbing. Second, the icing was too watery. I ended up adding a lot of confectioner's sugar to the reserved icing to make it more of an icing than a glaze. I used Irish whiskey but will probably also try rum...maybe flavored rum.
