Easy Slow Cooker Stew

This all-in-one beef stew, made fast with baby-cut carrots, canned tomatoes, and frozen green beans, simmers all day to meld flavors perfectly.

Ingredients

lb beef stew meat

large onions, cut into eighths

can (14.5 oz) diced tomatoes, undrained

cups water

tablespoon beef bouillon granules

tablespoon packed brown sugar

teaspoons salt
1
teaspoon pepper
2
dried bay leaves
1
bag (1 lb) ready-to-eat baby-cut carrots
1
bag (1 lb) Green Giant® frozen cut green beans

  • 1 In 4- to 5-quart slow cooker, mix all ingredients except green beans.
  • 2 Cover; cook on High heat setting 6 to 7 hours, stirring occasionally, adding green beans during last hour of cook time. Before serving, remove and discard bay leaves.

This stew can be also be prepared in a Dutch oven. Mix all ingredients except carrots and green beans. Cover; bake at 300°F 6 to 7 hours, stirring occasionally, adding carrots and green beans during last hour of bake time. Remove bay leaves before serving.

Feel free to substitute frozen peas for the green beans--either veggie will work well.

This is such a great recipe and reminded me of my mother's. I've taken leftover veggies from the fridge, cut up potatoes, along with what the recipe calls for and also put a dash of hot pepper flakes. HIGHLY RECOMMEND!

I added those little red potatoes, and quartered the whole onions! Is this ever Delicious! Note! You DO NOT brown the stew meat first. It cooks to perfection during the 6 -7 hours. I used the dutch oven option in my oven at 300 for 7 hours.

This was easy with pre-cut stew beef, baby carrots and frozen beans. I would call this more of a soup than a stew. Flavorful and simple. I'm not sure why, but the stew beef, although quite pricey, actually tasted a bit dry. Lots of juice in the broth and veggies, but the beef didn't seem to retain the flavor. I would try this again, but I would try a different cut of meat.
